Apple Watch series 7 won’t update

Hi, for a while I have been trying to upgrade to the current IOS on my Watch s7 but every time it says try again and error

ive tried un pairing the Watch, I also reset my Watch completely and still the same error 

tried hard reset on my iPhone, iPhoneXS max which is IOS 15.7.1 and says is up to date 

deleted the Watch app and re downloaded it 

but again same error 

 have tried to update the Watch both from the Watch it’s self and the watch app on my iPhone.

is there anything else that I could try
