No 3G -5G connectivity with mobile since transferring from Virgin media to O2. Only have WiFi access where available. Have reset network settings on the mobile, no change. Transferred SIM to old mobile and same network issues. Phone is currently unusable outside of a WiFi area. Solutions ?

Is this the forced migration to o2 or did you port in??
You have 3 options to get a new sim if you are on then forced migration path , VM will send you a sim card out automatically.
You could also pop to an o2 store with Photo ID, and they can do the sim swap there and then.
You can call o2 on 0344 809 0202 from another phone and one will be posted out to you, and it should arrive in between 2-7 days .
