I would recommend doing it all in store, as that way you save a whole world of pain and suffering many have suffered doing it online.
You can pre-order in store, and then day of release take it in, all done and sorted and new phone..
Also an excuse to take the wife for a birthday coffee / tea hence more brownie points.
I did this last year for my wife and was a lot easier...

Unfortunately @paddyposh89 the whole process has to be done in store, so you cant do any part of it online if going down the store route..
You can always pre-order it for collection a day or so later
I just wouldn't trust pre-orders from o2 ordered online for delivery on release day
