I was trying to connect to My O2 to top-up my Pay-as-you-go balance but every time the page changed I was confronted by a cookies pop-up that I had to either accept or manage the options before I could get back to the page I was trying to access.
Why can't the system remember the settings, even in the same session?
This is ridiculous.
Does anyone know how to bypass or disable these stupid, persistent pop-ups?
If the situation continues, I will be ditching O2 completely and move to another provider.

Use a different browser, use incognito mode..
Cookies are designed to expire...
Other than that seen as you are on PAYG just move to a new network, just request your PAC Code from o2.
