I know I can press the message whilst it's trying to send as an iMessage and select it to send as a text, but do I really have to do this every time I try to send a message?
Any ideas?

Alright...found two ways...you can go to your apple account and unregister the iphone you switched and sometimes this works...if it doesn't here is step number 2. Take Sim card out of your new android phone and put it in your old iphone...now go into settings/messaging...turn off imessage...turn on SMS messaging. now take sim card out and put it back into android phone...wahla!!!!
It works...for those of you who do not know how to open sim card slot in iPhone....simple...take a paper clip and push it in the little hole.... for those of you who gave away your iphone....borrow one...you need at least an iphone 4 to do this.
Hope this help...appreciate any feedback to make sure fix is working.

To update: I thought i'd give it some time. My mum got the email last night confirming that the old iPhone has been unregistered. I deleted my mum from my phone, reset my phone. When it turned back on I added my mum again and........still stupid blue contact!!! Still sending as an iMessage. I'll try your second option today.

Also, I've just tried the following:
Sent a text from my mums new phone
I clicked reply - it came up as iMessage but after I sent it, it converted to a text. I thought YAY it's finally fixed.
However, when I deleted the thread and tried to start a new message, it converted straight back to iMessage again 😞

I put my mums sim back in her phone - set the phone up from new, turned off imessages again. Still the same with my phone. I contacted Apple (as I read on another site that they need to remove the number from their server), Apple said they could not locate my mums number on their server. They said they are a bit baffled as me and my mum have done all of the things that were previously suggested. We were advised to wait a further 24 hours (as they sometimes take a while to update their system) and if the issue continues I have to contact them again.
So I'm still no further to a solution but at least I have ruled some options out

Apparently changing Apple ID and password works according to Apple forums..
Also, you have to delete your email and iCloud accounts and reinstall them if you still have another Apple device like the iPad, because your old ID will still be 'attached' to it.

My mum doesn't have an iPad and my iPad uses my Apple account. My mum never used iCloud.
I'll try to change the passwords and see if that works.

I have changed my mums Apple passwords and I have the same problem.
My mum texts me and it comes up received as a text message and when I go to reply it comes up to reply as an iMessage. Once I send it, then press it to send as a text message instead, then it will send. That is ok. But then when I delete the message thread and go to send a message again it comes up blue and tries to send as an iMessage again 😞
