To add I've swapped my sim into non iPhones and back again with no issues connecting to o2's data connection.

Perhaps a question for @Toby  @Anonymous

Do both Contract Customers and Payg need to be placed on iData settings on their accounts -> is their even such a setting on a customers account or does O2 detect what type of phone is being used and auto adjust ?

There were many new iPhone 6 owners that were on the wrong data settings and had to call to get data changed to iData, so if it is automatic it doesn't always work.
Also, iData settings will work in a different (non iPhone) phone, whereas standard data will not work in an iPhone unless you change the apn to "mobile.o2.co.uk" and then you lose the iPhone specific features such as VVM etc.
I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

Currently using:
Pixel 7a (O2 & Lyca), One Plus 6 (Sfr), iPhone 12 Pro Max (Vodafone)
