Hi, currently in Australia travelling and have a UK phone number and sim card with me. Recently just dropped and lost my phone in the sea what had my UK sim card in it. Bought a new iPhone now and wondering if I can set up an E-SIM with my UK phone number account as i’ll be unable to send a new sim card to Australia.

@Kieron2 The first thing you need to do is report your phone and sim as lost: Lost or Stolen O2 Device

You can download Skype Guide: A Guide to Skype to call O2 on +44800 032 1402
When it comes to the reason you are calling, stay silent for 15 seconds and you will be taken to the keypad options.
Press 2 for Everything Else
Press 5 for More Options
Press 7 for Anything Else which will put you though to someone.
Say 'Lost/Stolen', or 'Fraud' if the suggestion above doesn't get you through.
Best time to call is 8 am.

A physical sim will only be sent to your registered UK address, and I'm not 100% certain, but I think it's highly unlikely that you'll be able to install an esim from where you are, but you may as well ask.
