I have an Apple Watch and was on O2 PAYG. 
I have now changed to a monthly charged rolling plan. 
My Apple Watch says the O2 mobile service is not supported. 
Can anyone advise please?

Do you mean this type of deal: Pay As You Go: Introducing "Rolling Plans" - it is a PAYG product, no change needed, use your original SIM.

Or have you moved to a SIMO, SIM-only contract, with a new SIM?

You need to get O2 to add the iData bolt on to your account.

Rolling plans are still PAYG so do not support Apple watch.

What do I need to do to add the watch then? Can you advise?

I don’t mind entering a contract.

You can have a 30 day sim only which doesn't tie you in but would still allow the watch to work.
