If I buy an Apple Watch on gps and cellular from o2 once my contract ends does the Watch just work on the gps ?

You must keep an active airtime contract for the phone to work fully.

If you cancel or end the contract the watch is paired to you must pay off the watch device plan too.

Once paid off it will work as a gps device only unless you re-pair with another airtime plan.
