I'm off to fuerteventura and the resort has got a strong movistar 4g signal, will my o2 sim switch over to movistar 4g when I get there? Or do o2 use a different signal?

I have UK friends who live in Spain and it's islands .... they find the local Movistar sims are better and cheaper. They can also get 4G

I'm getting perfectly acceptable speeds on both my EE and Three PAYG sims so it's probably easier to take one from home than go through the hassle of getting one and topping it up in Spain.
You need to go through hoops to get a PAYG sim in some eu countries.
