You can pay as much as you like when you like. However your contract length would remain the same unless you are on a flexible tariff.

Of course if you paid the device off in full, you could cancel the airtime and move to a sim only contract.

No you don't have to take the sim only @marvi0. You would have to cancel your contact though

The phone you have now is yours to keep, as long as you have paid it off.
You can upgrade through any third party though it won't be a Refresh tariff.
If you are happy with your current phone you could go for a sim only contract which would work out cheaper
