Hello,
I have a spare sim which I do not use regularly. How do I find out when the sim is set to expire so that I have to charge it before?

You need to make a call at least once every 6 months.
If you message O2 on Facebook (https://o2uk.co/O2CFB) , Twitter (https://o2uk.co/O2CTW) or Instagram (https://o2uk.co/O2CIG) , they should be able to help you with this

I changed the tariff to be 20 Big Bundle from the £5 text and voice so that I could top up £10 and not have the money taken by any bundle.
Annoyingly after changing the tariff I topped and the old bundle kicked in and £5 were taken off the balance.
Can I have it rolled back?

I have contacted them and explained but somehow they gave back £3 instead of £5. No idea why. Can anyone guess? Was I charged for the call to 4445?
