My question is can my number get transferred to the new esim from the physical sim without having to go into the store? Could I get it done online? Or should I keep my physical sim

Yes you can get an o2 PAYG esim (confirmed on other sources), but only in store... and to be honest if anything goes wrong you can only replace it in store..
So tread carefully..

I think all the regulars here would advise staying clear of an eSIM unless it is absolutely essential.
Too much hassle if you need to change handsets

The thing is, though, I have a LycaMobile US SIM, which I don't want to switch to eSIM because I have had issues with them in the past. My O2 SIM is only really ever used for roaming, and I could keep that on my phone without having to remove it.

but you'll need to go in store to swap to it and keep your number.
You'll need to take photo ID with you too.
