Hi. I'm in the UK. My Lumia 930 has just updated to Denim. Hey Cortana is missing. No setting for Hey Cortana in main settings page. Any info please ?

Cortana is part of the Denim update.

"Hey Cortana" is processor dependant and the 930 should have it as it has the Snapdragon 800.

When I updated the Lumia 520 to Denim - I'm sure the Cortana update followed a Day or so later.
