I can I convert my physical o2 SIM card to a eSIM card

If your phone supports it, yes - check under SIM Details in your MyO2.

Note you may find your physical SIM drops out of service immediately you select switch to eSim, so you could try the swap in an O2 store, but take photo id with you, @Hardik22.
