It does tell you that as soon as you start the esim process your physical sim will deactivate.
Are you connected to wifi in order to to complete the download and activation of the esim ?
I would personally stick to a Physical sim, as esims cause all sorts of problems, and the only you are going to be able to use on is pop to your local o2 store with Photo ID and they can process a new physical sim for you..
