I sent my relevant identification documents (Birth Certificate, Change Of Name Deed Polls) to O2 via email, to the address O2 provided me to send them to. It’s been over 5 days now that they stated this would take to change my details...can anyone tell me any other way how I can get this done urgently please???

They are admin on the community. One of them will send you a private message tomorrow for further details so check back in the morning. Check the link at the top of the community and you will possibly get email notification too.
