This issue has gone quiet and we were told that it would be fixed with a software update so assumed all was now well.
First check that you are fully up to date with software and if so, yes, it's worth trying an eSim.
Edit to add that it may also be worth getting Apple to check your phone https://www.apple.com/uk/retail/geniusbar/

You could try an ESIM. Also might be worth turning on WiFi calling to see if this boosts signal whilst on WiFi.
Hope one of those helps, or there's a fix out soon.
