I upgraded my iPhone on 8th Sept, and ordered a new SIM as I wanted 5G. The sim still hasn’t been activated. I have called the call centre twice, who advise there is an error and keep asking me to wait in periods of 5 days …. I am without a phone it’s madness

You could pop instore and get a new sim as the one you have may be faulty.
Or try O2 again and ask them to send a new sim.
