I’ve recently upgraded to an iPhone 12 they sent a new SIM card so do I use that or the one from my iPhone 8? Does it make a difference?

Your original sim will have your new contract on it so can be used without a problem, however, if you are in a 5g area, you should sim swap to the new one sent with the phone Guide: Sim Swap: a mini guide 2017 update

Yes you can but it will only get maximum 4g speeds.
