I requested my old number to be ported over to O2 on the 21st March, i am STILL waiting for the port to happen and now my PAC Code from my old provider has expired! what do i do now?

Contact your previous provider to see if the PAC has been used. If they issue you another then you need to start the process again.

Porting is taking ages with every network during the current crisis.

You need to request again.

I have tried 6 times so far, im assuming i cant try again now my PAC code has expired?

You'll need a new PAC now.
