I am thinking about getting an Apple Watch but I’m new to o2 so unsure how to use the app etc is there anyway of adding on a watch to my contract to pay monthly or is there only buy outright? Jess

If you have an iPhone you can buy the Apple Watch from anywhere and add the sim only plan for the watch to your existing agreement. It’s £5 per month on a 30 day rolling contract

You have to buy the watch outright @Jesskaa 

A data plan is £5.00 per month if you have a contract with O2.

Yes you can add the Apple Watch to your contract and pay for it monthly. 
you only need the £5 monthly plan if you want cellular watch functions, otherwise you can just connect to your phone via Bluetooth for no additional charges
