I ordered my Tab S8 ultra 512 Gb back on 31st March and told then up to 2 weeks, then it was weeks and recently 1 week but still shows on my order awaiting stock.
This morning it says that can order for next day working delivery so very confused on what is happening.
I am now wondering what process is if I have since changed my mind and cancel the order ? Do I get my £20 upfront back and it just doesn't get sent to me or is there more issues that will stop me doing that?

If you cancelled you would get any deposit back.
The fact that you are seeing them instore and showing in stock is typical of O2. O2 do NOT have a live order system so although they say in stock, they won't be.
Looks like you should contact the sales team as they can help with that – message them on Social Media if that works best for you -on Facebook (https://o2uk.co/O2CFB) , Twitter ( https://o2uk.co/O2CTW) or Instagram (https://o2uk.co/O2CIG)
