Can I cancel my airtime contract to replace with another provider and keep the phone contract rather than paying what's owed in one lump sum?

Not possible I'm afraid. You would need to pay the device off in full.

Had message of O2 to say airtime contract was up so I thought I could end this effect another with another provider but keep paying for the phone

Nope the 2 are interlinked and as @Cleoriff has said you have to pay off the device plan at the same time as cancelling the airtime.
