Hi.
According the all the guidance, as I purchased my Galaxy S10 from carphone warehouse, not direct from 02 I am unable to get wifi calling as I don't have the correct "CSC" code. I pay over £50 quid a month have been a loyal customer for years. This surely cannot be correct?!
Any pointers?

No that is not correct.

You need to ask O2 to enable it on your account first, then you can activate it in your MyO2 and on the phone.

I have been trying to do it online for an hour and go around in circles.. I will maybe have to call, as I cannot find the option anywhere in my 02.

You need to call first to enable it.
Then in your MyO2 under the "more" dropdown menu.

MI5 - I have been back through the instructions, and my device is not supported. Although a galaxy S10, as it was not bought direct from O2, and so doesn't have the correct firmware. Thus according to 02's own page, it isn't wifi calling enabled.
If you are using a J3 (2017) to get Wifi and 4G Calling, your device will need to use O2 firmware. This is essentially the software that makes your device turn on and run. Sometimes there are different versions of firmware for the same device.
Your device should use O2 firmware if you bought it direct from us in an O2 shop, online or over the phone.
To check if your phone’s running O2 firmware, dial *#1234# and look at the CSC entry. If this line includes ‘TEF’, ‘O2U’ or ‘OTF’ then your device has O2 firmware and you can set up Wifi and 4G Calling.
If the CSC doesn't include one of these codes then Wifi and 4G Calling isn’t supported on your phone right now.

Only phones with stars next to them are not supported.
