I want to change my delivery to collect in your local store but I have no idea how I could do that.

Basically you can't.
If it cannot be delivered to home after 3 attempts it will be returned to O2.
At this point you can rearrange delivery or you could just cancel and reorder, but you won't get any upfront fees refunded for about 3 weeks and it could cause more problems in the future if not cancelled correctly.
In all honesty, you are much better off trying to be available to receive your order in the manner you have already requested.
