O2 staff have just confirmed to me that wifi calling is enabled on my O2 account but I don't think its working. there are times when I'm connected to wifi and I can't make an outgoing call. wifi calling is enabled on my phone, I've checked and double checked.
I use a samsung galaxy S8. I've also read conflicting reports about needing O2 firmware on the phone and others say you don't need O2 firmware, I just don't know what the truth is. I have searched on google about this but there's so much out-of-date stuff out there its confusing.
my question is: how can I know/verify at my end that the call I'm making is using wifi calling?

You will see an icon in the top left had corner of the phone. and it will say on the phone screen during the setup of the call if it is using WiFi Calling.
I do not work for o2 or any VMo2 /Telefonica/Liberty Global Company

"You will see an icon in the top left had corner of the phone."
what sort of icon? what does it look like?
"and it will say on the phone screen during the setup of the call"
what will it say? where on the screen? what exactly am I looking for on the call setup screen?
atm I don't see anything on my phone that tells me I'm calling through wifi

Turn on airplane mode, then enable wifi.
If you can make a call, it's working.
Make sure O2 have enabled wifi calling on your account, and that you have enabled it in your MyO2.
It also needs to be enabled in your phone's settings.

Did you see the question earlier about if you are a pay as you go (PAYG) or pay monthly (PAYM) customer @tonjg ?
The reason this is important is that o2 do not offer WiFi calling on PAYG...
