Just to update you:
On Friday I was told that the Apple technician would call me back on Monday (yesterday), however nobody called. I deleted my mums number and email from my phone and on iCloud. I added her again and it went blue and straight to iMessage again.
I contacted Apple again. I had to explain myself from the beginning again even though I used the previous case ID. The advisor was stumped and didn’t have a clue. I was passed to a supervisor. Frustratingly I had to go through everything again (even though it should have been on the notes) and then reiterated what I had already done myself to try to resolve it. The supervisor said that it needs to be passed to technical support, which I already told him that it was done on Friday.
The supervisor seemed confused.
I was passed to another supervisor and he said that he could see that note that was sent to the engineers on Friday and it was apparently sent as a high priority. Again he went through all of the things I should try and again I explained that I had tried it all.
He said he would chase it up and get back to me later on this week.
So I am no further in getting this sorted.

Just to update, I am still waiting for Apple to contact me. 😞
I tried to contact them today but the technicians are not in until tomorrow and they are having technical difficulties anyway.
Also, I tried to delete my mum as a contact AGAIN on my phone and on iCloud but still no use. Takes ages trying to text her (without intervention) or having to select to send it as a text after it tries to send as an iMessage. My sisters are having the same problem so it's not my phone that is the issue.
I will update you when I have more information.

So........
I just had a very long to Apple regarding this.
It has been over 2 weeks and still no call back or resolution.
Again, I had to go through everything from the beginning and repeating myself about what I had already tried.
In the end, the advisor suggested that my mum should get a new sim (she is using an adapter with the sim at the moment since swapping from Apple to Samsung). I was told that it could be an O2 issue as the sim that she has may be provisioned to Apple settings. He then started talking about random techno jargon that went over my head.
The advisor said that he would sent ANOTHER message to the technical support team (the 3rd message) and ask them to contact me.
In the meantime, I have to get my mum a new sim and see if that works.
I don't really understand about provisions and that - do you think Apple are just fobbing me off?
I asked the advisor if the Apple provisions would carry over to the new sim, however he could not give me an answer 😞
I guess I just have to wait again.......

She never used data on the iPhone - she never changed any settings from when she had the first Samsung (before the Apple).

She has no data plan on her phone. She has never used internet on any phone that she has.
She said she gets 1000 O2 minutes or O2 texts when she tops up £10.00 and £5.00 is taken from her balance for the O2 Friends bolt on.

I had a standard sized sim spare so I did the sim swap - it worked quite quick and has now swapped. I went through the process of deleting my mums number from my phone and from iCloud (AGAIN!!!), sent a text from my mums Samsung phone, I received it as a text but when I tried to reply it came up as an iMessage (AGAIN!!!!!). I deleted the message thread and tried to create a new text and it came up as an iMessage.
I don't know if there's any truth in what the Apple advisor said today (regarding the provisions).
I logged into my mums My O2 account and it confirms that my mum has the Samsung phone and the correct IMEI number is logged. I also made sure that she has the correct O2 settings on her phone.
Apple are repeatedly saying that my mums number and email address (Apple ID) are no longer on their system, but surely it is there somewhere if it automatically goes blue and converts to an iMessage for everybody else who my mum knows who uses an iPhone. Surely it's not all of our iPhones that are broke?
