You can safely flash up to BTU without tripping Knox if you are unlocked....

I am unlocked (from o2) but still have o2 software on the device.

How would I Flash up to BTU and is it worth it or should I just wait as the plunge works fine

Damien would be the best person to check for on advantages (he can tell you what his phone does new since the update), but in general you'll get updates quicker and no O2 branding.
Just follow my Odin guide and use the BTU ROM instead of the O2 one.
