When I am on a phone call, the call keeps dropping. Most of the time I just call back but sometimes when I try to call back I get 'server unreachable'. Really starting to get on my nerves, been going on since backend of last year. Never had this problem with any of my other phones. Currently on s20 ultra with a 4g sim card. Have the 5g card but don't know how to swap all the info over (ps 5g not available in my area anyway).

It sounds as if you may need a new sim. I know you say you have a 5G sim although no 5g in your area but you can do a sim swap to the new sim. It will work but only give you 4G.
How to swap here
Guide: Sim Swap: a mini guide 2017 update
Remember you need to swap using your OLD sim, when that loses service, put the new sim and keep rebooting the phone.

I have done it through My 02, requested to change sim and entered the 6 digit code. My phone now say 'SIM 1 not provisioned'. Do I put my new sim in now, or wait for further instructions?

@Nickey If your old 4G sim has lost service, put the new 5G sim in and reboot the phone.
Edit: If you still have connection issues with the new sim, you'll need to speak to customer service: Guide: Coronavirus Community Help and Support
Here is alternative advice from an O2 Guru on how to get through.
Call 202 from your mobile.
When it comes to the reason you are calling, stay silent for 15 seconds and you will be taken to the keypad options.
Press 2 for Everything Else
Press 5 for More Options
Press 7 for Anything Else which will put you though to someone.
You may have to use the Upgrade, Lost/Stolen, or Fraud option to get through.

Thank you for your help today, new sim is in and all my info is there. You are worth your weight in gold. Will monitor the calls next week and hopefully no more drop calls - fingers crossed. Thanks again x
