Since the storms over the past couple of days my O2 phone signal has hugely deteriorated. From having a strong 4G signal I now have no 4G and 1 bar signal (using iPhone). O2 status checker says no problems; I’ve followed the instructions to check my phone settings etc but no change.

looks to me as though there’s clearly a signal issue but who can I call to get this properly checked?

I expect O2 know which masts need repair @GregB

Here's the information we were given to pass on to customers

https://community.o2.co.uk/t5/Welcome-News/Storm-Eunice/td-p/1531751

However if you download the My O2 Network app you will be able to report issues via that
