I topped up with a £10.00 bundle which gives me 500mb of data I have received a text saying that my allowance has been used up within 24 hrs. How can this be as I haven't used my phone with any data service other than when connected to the home wi-fi?

Possibly a rogue app using all the data or its continually searching for a data network, turn off background refresh if it's an iPhone & wifi assist

I renewed my bundle on the the 10th Jan and got a text message saying I had used all my data on the 11th Jan
My bundle gives 1000 texts 250 minutes and 500Mb of data.

I had the same problem the month before so that was over 24 hours as I had no data allowance until I had renewed.
How do I disable contact sync?
Play Store Apps are configured to auto update over wi fi only.

You need to go into settings, accounts, Google and then options will allow you to tick what you want to sync.
