Can I take a pay as you go SIM in my name, give it to a relative and share some of my Pay Monthly data with them when they are low on credit? I'm sort of assuming that this is a no but thanks in advance for the help!
Current devices: Apple iPhone 15 Pro Max, Apple iPad Pro 11” and Apple Watch Series 9 (all with O2)

This isn't something I think you can do with O2. Perhaps try a quick call to customer service and see if they can give definitive answer though.
