I have taken delivery of an iPhone 12 Pro Max. It came with a SIM card but I am unsure what I do next. I thought I would simply transfer my SIM card from my old iPhone 6

You can use your current sim card without any problem as everything is changed on the system

However, if you want to use 5G when in a 5G  area of coverage then you need to do a sim swap
