How do I go about getting an O2 SIM for use ONLY for texting a charity to donate any monthly reward that might be coming my way ?
I guess the O2 Basic tariff would be the one to go for, do I just get a SIM from an O2 shop and request the Basic tariff to be applied ?

Your best bet would be to order a Big Talker or International sim online ( https://www.o2.co.uk/shop/sim-cards/pay-as-you-go/ )
You don't want to order a Big Bundle sim.
We have to top up any sims we provide in store, so online would be best for you.

Basic has to be applied by CS whereas you can choose International yourself.

@Beenherebefore As @MI5 said, I bought an International sim with £10 of credit on it on Fleabay for £7. It was all legit. You can then request your reward goes to that number.

You do get allowances (a small amount) with the Int sim which you can also use but you also keep the credit which is the important bit for the donation aspect to work..

Are you just adding the reward value and retaining the original £10 credit amount ?

Basically, yes, but Toby added some backdated credit from previous months when I first set it up as well.
