I will be staying in Australia for 7 months.

 

Do I need an Australian number or can I stick with my current UK number?

As I said, for that length of time, it makes sense to combine the use of both depending on needs.
The Aus sim can be used to provide data for Tugo too so best of both worlds.

Standard VoWiFi uses IMS network which may potentially connect you to the IMS network of the visited network and may still incur roaming charges.

No I think you are correct.
Using Tugo would be free but if using EE wifi calling additional costs would be incurred if it even actually worked.
