So, I've gathered from reading previous posts that my contract which ends in around 11 days will automatically transfer over to a 30 day rolling conract as I'm late giving notice.
But I've also read that by using a PAC code with another provider it automatically cancels the contract.
So does that end the contract there and then or does it give 30 days notice?
Also, whilst 'still in contract' can I still get my phone unlocked for free?

Requesting a PAC gives your 30 days notice however that notice will expire if the PAC is not used. Once the port completes your service with O2 will terminate. If this happens before the end of the 30 day notice period, your final bill will have a line rental charge applied in lieu of notice for the full 30 day notice period

requesting a PAC does not cancel your contract, using the PAC and moving your number to a new provider will cancel your contract.
And yes, you can have your phone unlocked for free whilst still in contract.
You can fill in the online unlocking form.

Easier said than done, I've tried calling to get my PAC code on numerous occassions ~ kept waiting for 30+ minutes, and live chat is a waste of time, crashes constantly.
Still trying ( on hold again now!) and my contract ends on 4th Feb .....

That is no longer necessary, the same as you not having to sign on a paper contract.
