Once we have a green light for the roll-out, we’ll update this post and O2 customers will be available to download the update via Zune. Exciting times, right?! Meanwhile, I’m curious to know which particular feature from the latest version (7.8) are you guys waiting for?
Update 31/01/2013: WP 7.8 is live for Lumia 610, 710, 800, and 900 and WP 8 PR 1.1 for Lumia 820 (OTA).
What does the update include? For Lumia 610, 710 & 800 devices, it includes:
• New features to the Start Screen, new colors and lock screen improvements.
• WP 7.8 OS includes enablers for new apps such as Bluetooth Share and Ringtone Maker.
For Lumia 820 devices, improvements include:

I tried to get the above method to work for about half hour and was unsuccessful so I did some searching around and found this and got my lumia 800 to update first time I hope this helps

Had a quick look at that video, it's the same method as what was posted.

Have finally succeeded in forcing the update, first update was the Nokia one, then after numerous attempts, got the other two, the last update being the main one....
So it is down to timing, about 2 1/2 seconds from clicking 'update' to killing the wi-fi
wait too long and it's 'your phone is up to date' too soon is 'cannot find update now etc..'
best of luck!
now off to play with the new full tile set up!

Just thought i'd add to the method mentioned by Mld, as others have said it takes a few tries before it works, however different computers seem to check at different speeds, trying to switch of the internet after 2 seconds got me nowhere, so i opened zune and clicked update, counted how many seconds it took to tell me my phone was up to date and then the next time turned it off a second earlier, managed to update my brothers phone after first time, hope it helps

i initially followed the wpcentral guide of disconnecting wifi which gave me a mini update to 7.10.8776 i did this on thursday but not managed anything else since. popping back to these forms today and i agree with the post to count down the time it takes to return no update available. I decided the proplem might be with the wi-fi and timing so i decided to hook it up via ethernet.
counted how long it took my pc to return no updates (as stated), then disconnected the cable as late as possible and bingo, its now updating to 7.10.8783.12 from the previous version so lets see how any additional ones come through...i will follow up once this has finished...
UPDATE
tried about 3 times again, disconnecting cable and bam got the update
in total i have had 3 updates one on thursday and 2 this morning. so my conclusions as i do not thing it was coinsidence that at the same time i tried to force the update that it was actually "my chosen time" lol so if you are doing your own head in waiting for the update, give the above a try...
sad thing is i have been looking forward to this update since it was announced, love my lumia but actually took another contract yesterday with a w8 phone 820 on a new contract so will sadly be flogging my 800...sods law i suppose
final post, looks like there is only 3 updates, good luck it does work with a bit of patience.

I managed to do the update using the method.
I found it easier to disconnect my ethernet and use the wireless network then using the WiFi toggle on my laptop to disconnect once I clicked update on Zune. Took a few attempts but I got there in the end.
7.8 isn't all that. Apart from the start screen and a few other tweaks not much else has changed - but that doesn't bother me as it keeps the phone fresh until O2 get the 920 (soon?!!) or the rumoured "cat walk" Lumia is released.

As anyone noticed a loss in sound quality and volume level since updating to 7.8?
