I rang o2 on Saturday and they said they would deactivate my old sim and transfer my number onto my new one within 24 hours however I am still waiting for this to happen

OK, so O2 can't do this for you.
First you need your PAC from O2 https://community.o2.co.uk/t5/Pay-Monthly-Pay-and-Go/How-to-get-your-PAC-2017-Update/ba-p/1052278
Then you need to give the PAC to giffgaff

Hi @Anonymous have you received a text or email confirming the swap? Do you still have service on your old sim? Have you received the new sim that the number will be transferred to? 

 

You may may need to pop into your local o2 store & they will sort it out for you or use this link to do it yourself
