No cellular connection on Apple Watch Ultra

Hi all, I've recently bought an AWU (from Apple not O2), which arrived on Monday. I added a cellular data plan to my O2 an account and received a text from O2 on Monday to say it had been set up and was ready to use.

 

This morning I thought I'd try it out so went to the gym and left my phone at home but I could stream my music, send a message etc., and when I looked under settings the cellular icon is greyed out and says No SIM under "Plan" and No Connection under "Status". Also, when I look under Mobile Data on the Watch App on my phone it shows O2 but says "Not In Use', the other day it was showing as active.

 

Can anyone advise how I can resolve this? 

 

EDIT: I've also just checked my O2 bill and under my mobile number is says 'Sync-1" which I understand is my Apple Watch plan.
