Message/ email contacts

I have a Samsung galaxy s111 mini, when i want to send a message and look for a contact all the contacts in my Gmail and phone account appear, can i set the phone to only show mobile contacts.

Yes, in the contacts app, press menu then select "contacts to view"

I selected sim, but whenever i am doing a text message and touch the little pen which takes you onto the new message screen and touch the little person icon all my contacts still show.

Yes it will.... when in an app it will open all.
You can open your contacts app and select to send an sms from the contact in there without going to the sms app first.
