Watch5 4g calls not working

My watch and pixel 7 were not playing nice together so I used switch up and got the S23 Ultra.
Annnnnd it's still not working. So that's £10 a month extra. Yay.
Anyway,
I've read posts about hidden settings and making sure things like calls and texts from other devices is turned on so that's done but I did notice that even my pixel and this new phone show my number as the SIM cards original number before I transferred my number in from three.
Could this be the issue? And if it is how do I fix it so it shows the correct number?

The number shown is irrelevant. If you had a new sim it would be blank and show no number at all.

I followed the guide but section 7 is incorrect for me. I found it under connected devices. The setting is on and my watch is listed.
I did not go into o2 but my esim seems to be working, the watch says it's connected to 4g on o2.
