I travelled outside of the EU.  I bought an eSim and enabled it so that I would not run out of data and end up with an enormous bill.  My bill has arrived and I have been charged £5 a day for the overseas bolt on.  Never asked, never agreed and unhappy.  How do I stop this?

O2 Travel comes as standard but if you are in Europe there should be no extra charge

So you or an app used data whilst outside of the EU, and correctly been charged for roaming.

If you wanted not to be charged you need to turn off roaming data.

You also agree to this when you joined o2 as per the T&C's
