I'm having issues using mobile data on my Pixel 7. It will just say 'no connection'. Coverage is fine etc. It will only work if I reset all my network settings, which erases all my previous WiFi connections so isn't ideal, it also stops working within an hour. I have altered the APN with no success. I have swapped the SIM 3 times with no success. The phone seems to work ok with my partner's EE SIM so it must be o2. I have also exchanged the phone for an identical one and had the same issues. I have contacted Google support who couldn't help and O2 support have been less than useless. Any help would be greatly appreciated.

Quite a few issues with this on O2 across various different phones.
It appears the fix is to get O2 to disconnect your account from the network and reconnect you a few hours later.
It's the equivalent of a master turn off / on again.
