Yes
It's dual sim, dual standby, so both sims are always active.
No, only one contact app.

When the e-SIM and the physical SIM are active, you assign them a recognisable name and select which number is your default one.
When adding new contacts you associate each with one number or the other. As you will have two different service providers, should you not have a connection with the provider of the mobile number your contact is assigned to, you will be prompted if you would like to use your other number to phone with
You cannot restrict the contact to ONLY be associated with one of the numbers… and can quickly swap which one you want to use to message or call them from
