Why is it that you can withhold your number from being seen when you phone someone but can't when you text someone.....why is this?

Just how the networks setup structures are.

 

Personally i dont generally anwser incoming calls that are blocked, and I certainly wouldn't be opening text messages that have a blocked i.d.

Unlike phone calls texts are not anonymous. Not sure why you would want to send one in fairness.
