You can only save the chat if the chat window is open.
The only possible way now is if you contact customer services and ask for it to be emailed to you. Though they may charge you. Guide: How to find help & contact O2

Just to add to the above (thanks for the info @Cleoriff !), in case you were chatting to customer service via the newly updated My O2 app, you can find the chat history on the 'Conversations' tab.
