Question about Apple Watch 4G and data plans

Hi, I'm thinking of buying an Apple Watch Series 5 (4G) for someone who already has an iPhone and O2 Pay Monthly plan. My question is this - I've read the Apple Watch has an "eSIM" so doesn't require a separate SIM or number, but are they able to share their existing Monthly data plan with both their phone and the Apple Watch together (so both devices use the one existing data plan)? Or do they have to buy a new, separate data plan for the watch and effectively have two data plans running? I just wanted to be absolutely sure before buying as neither of us have used a smartwatch with LTE before.

Thanks. In that case am I still right in thinking it doesn't need/use a separate phone number too?

Ok, thanks. Hopefully last question and sorry to be a pain but can you link me to anywhere official that says the plan is only £5 a month? I'm struggling to find things through normal routes on the O2 website and can't find any SIM only option that makes the price clear. The only thing I can find is another forum post from mid-2019 saying there was an offer on at the time.

How do I go about removing a Apple Watch series 6 data plan if the watch has been passed down to a family member who isn’t with o2 and I have changed to a different Apple Watch (which having to add another plan to it) ?!
