If I buy and Applewatch I understand to enable the cellular option I have to pay £5 a month on top of my current monthly bill. What I can’t seem to find is if this is a minimum term or is it just a rolling monthly fee and can be cancelled whenever?

There is a minimum term for the watch but not for the data plan.

The watch is also tied to your phone plan, so if you cancel the device plan you're attached to you have to cancel (and pay any fees) for the watch, unless you buy the watch outright in the first place.
