After troubleshooting with O2 and Samsung - my phone had randomly dropped off the O2 Network one day- I was sent a new SIM by o2 which was activated over the phone.
When I received it I inserted it into my phone and then turned the phone on.
I'm still not getting any network/4G - nothing. Are there any settings I need to adjust on the phone?? Does it sometimes take awhile for the new SIM and handset to 'talk' to each other?

If it was activated over the phone it should be working. Reboot the phone and if nothing happens then you need to contact O2 on any of the numbers in this guide Guide: Coronavirus Community Help and Support

I'm able to look up the "SIM Card status" in the phone and everything is blank. I was given a default activation pin but don't know where I could enter it....

This is why you should call O2. If the sim isn't working or has not activated, only they can provide assistance.
Call any number or use Skype to contact them

On the phone with them now - it does seem like it's a handset issue.
